If You Really Are What You Eat….

Then I am about to turn into a pumpkin. I really didn’t intend to post yet another pumpkin recipe, but this one was just too good to keep to myself.
“Apple Pumpkin Rice”
1 c. instant brown rice
1 medium granny smith apple
A handful of baby carrots, chopped
1/4 c. onion, chopped
1/2 c. pure pumpkin
2 Tbsp. SF maple syrup
Cinnamon, to taste
Salt, to taste

Spray a small skillet with cooking spray and add the onion, carrots and apple. Saute until soft. Add spinach and stir mixture until it has wilted. Add rice, pumpkin, syrup, cinnamon and salt to taste. Mix well.I was going to add a chicken sausage to this, but I decided against it when I saw how much this recipe made. The dish would have also been delicious with raisins or walnuts tossed in.
