I took some time away from looking at my rather unpleasant schedule tonight to make one of my favorite quick dishes for dinner.Sausage and Peppers!
This dish really couldn’t be easier! Simply slice one whole green bell pepper and as much onion as you would like (I really enjoy sauteed onions, so I used about half of an onion for this dish). In a pan prepared with oil or non-stick cooking spray, just saute the veggies until they become soft. Then add 2 diced sausages, garlic and 1/2 c. of your favorite tomato sauce and mix! See, super simple!
I also enjoyed a lightly toasted bread stick on the side. This is a necessary component to the meal, because you can use it to sop up all the extra sauce at the end. That was my favorite part!
Why Would Jessica Eat This?: Think onions are totally void of nutrition properties? Think again! The World Health Organization (WHO) supports the use of onions to not only prevent atherosclerosis, but also to provide treatment of coughs, colds, asthma and bronchitis! That makes cutting them worth the tears!
OMG Jessica… onions… It took me 40 minutes to mince an onion the other day for a recipe because my eyes were on FIRE!! Then when my husband got home he is all… "you could have just put it in the food processor". NOT what I wanted to hear! haha. But regardless, very healthy! π (One more month till April 1, are you getting excited??)

Mmm, I love sauteed onions too! But I can't stand them raw–and I usually try to find someone else to slice them up for me π And SO exciting that you're that close to the end! Totally worth the busy month.

I thought the exact same thing about the bread sticks when I was looking back at the pictures! They just aren't as greasy…which also means they aren't as good! But definitely healthier!
